Call-food50's Tomato Basil Spaghettini

This recipe for World Class Mashed Potatoes was sent to us by Gamesviller call-food50 from Springfield, MO.

Ingredients:

  • 1 (16 ounce) package uncooked spaghettini
  • 1 (14.5 ounce) can diced tomatoes with garlic
  • 2 fresh tomatoes, chopped
  • 1 cup fresh basil leaves
  • 2 tablespoons minced garlic
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 4 ounces soft goat cheese
  • freshly ground black pepper to taste
Directions:
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. In a blender or food processor, blend the diced tomatoes, fresh tomatoes, basil, garlic, olive oil, and pepper until chunky.
  3. In a bowl, toss the cooked pasta and tomato mixture. Sprinkle lemon juice over the pasta and top with goat cheese just before serving.

Gina's Famous Guacamole

Gina's Famous Guacamole was submitted to GamesVittles by Gamesviller "Ginagmc" of Tularosa, N.M.

Ginagmc says: "This guacamole will be very spicy if you follow the directions exactly. For a mild guacamole, cut down on the chiles and hot sauce. But I guarantee, if you bring this to a get together you'll go home with an empty bowl!"

 
Ingredients:

  • 4 medium very ripe avocados, halved, seeded, peeled and cut-up
  • 2 Tbsp. lime juice
  • 1 small onion, minced
  • 4 oz. can diced green chiles
  • Several drops of hot sauce, to taste
  • 1 Tbsp. snipped cilantro
  • 2 cloves garlic, finely minced
  • 1 Tsp. salt, or more to taste
  • 1/2 Tsp. pepper
  • 1 large or 2 small serrano chiles, finely chopped
  • 2 large or 3 small jalapeno chiles, finely chopped
  • 1 medium tomato-peeled, chopped and seeded
Directions:
  1. Put avocados and lime juice in bowl. Mash until still partly chunky.
  2. Add onion, green chiles, hot sauce, cilantro, garlic, salt and pepper  serrano and jalapenos chiles. Stir until mixed well.
  3. Add tomatoes, stir until just combined. Refrigerate for at least an hour to let flavors combine.
  4. Serve with tortilla chips and enjoy!
